Die Pasilla-Chili stammt aus Mexiko; auf Spanisch bedeutet ihr Name "kleine Rosine", eine Anspielung auf die dunkelbraune Farbe der reifen und getrockneten Schoten sowie das rosinenähnliche Aroma. Die Schoten entwickeln einen komplexen Geschmack nach Weintrauben und Beeren, der besonders nach dem Trocknen zur Geltung kommt. Sie verleihen Suppen, Schmorgerichten und Saucen eine besondere Note.
